These little bites are so simple, nutritious and quick to make. The ingredients are easy to find, most supermarkets or your local health shop will stock them. Full of protein, antioxidants, vitamins and minerals a very healthy little snack. Protein which is essential for growth, protection and repair of your body tissues, organs and muscles. Antioxidants are nature’s soldiers, they help to slow down and combat age related illness, improving your overall health. Chocolate and the golden berries are very high in Antioxidants.
How to make Protein Cookie Bites
They freeze well in little containers handy to take with you to work, school or after sports. You can even prepare them the night before and pop them in the oven before breakfast if you are very organised!
They are so easy to make and its great way to introduce children to healthy cooking as they can help if not make them (depending on their age). The younger ones can measure, (the beauty of using cups for measuring) mix and of course make the shapes what all kids (and adults) love doing. I found with my own children explaining the ingredients, why they are good for us, whilst we cooked had a deeper impact on them. They learn to enjoy and take more of an interest in what and why they eat.

Protein Cookies bites - Recipe
You can play with this recipe to create changes, for example add super greens for extra nutrients, apple juice to replace milk, sesame seeds to replace the coconut. Use different dried fruits, make sure to chop them finely to avoid burning.
¼ cup of protein powder vanilla or flavour of choice or coconut flour you may need to use more liquid.
2 tablespoons of nut butter
1 to 2 tablespoons of milk (nut, rice, dairy or coconut)
2 -3 squares of dark chocolate
1 tablespoon of desiccated coconut
1 tablespoon of dried fruits of choice golden berries (golden berries and sour cherries give a lovely sweet and sour flavour)
Method.
Pre heat oven to 160C Line a tray with parchment paper.
Mix thoroughly all ingredients in a bowl using a fork or your hands.
Combine thoroughly to a paste like consistency
Shape into small nut size pieces( keeping the sizes small helps avoid over eating)
Place on a tray lined with parchment paper
Bake for 7 – 10 mins check they should be crunchy outside soft inside
Decorate (optional) with melted chocolate and sprinkled with coconut flakes, cinnamon,
Or sesame seeds.
